Can any RCA cable be used as a digital coax or does it have to be a 75ohm one? If I wish to exploit this digital audio function, would these regular RCA cables work, or do I need a special 75ohm digital coax cable actually not expensive?

Theoretically there is nothing about any given RCA cable no matter how its made that is acceptable for a 75ohm connection. In practice, do whatever you want unless the wire run is more than about 10feet. Honeybadger dont care and neither does your digital signal. OK, so what you are saying is that there is no difference between a "regular" RCA cable and a special "digital coax" one?
A digital cable uses 75 Ohm cable. It should have 75 Ohm plugs and sockets, but laziness on the part of manufacturers means that it doesn't. I wouldn't worry about it for your TV though. And there you have it, digital audio ready to transmit through your analog receiver. Is RCA output analog or digital? Still no custom title. RCA outputs are analog. Optical and coaxial digital outputs are digital. Can you convert digital audio to analog? As many home hifis and amplifiers don't feature a digital audio input, a DAC device will input the digital audio signal from your source device and convert it to analogue— usually via dual phonos — which can then be connected to your conventional analogue audio system.
Can you convert optical audio to HDMI? It has an optical audio input and can be connected to a speaker via HDMI, so basically it looks like it converts the optical signal. Is RCA better than optical? If the distance is sufficiently less than 50', within the length of available optical cables, use optical. If not, you'll have to use the RCA cables. If it sounds good, fine.
If you get hum or RF rubbish, look for a better system. Visibly, a digital coaxial cable looks like a coaxial cable with RCA connectors on each end see Figure 1. This digital coaxial cable is different from the standard RCA cable in that it is designed to handle the wider frequency bandwidth of the digital audio bit stream. Coaxial audio cable is better than analog RCA cables if and only if you can use it.
Fiber optic cable sends the same digital stream as coaxial audio cable. Only cons, decent audio cable has similar capacitance than coax and bandwidth to give away. And, in our experience, compared to optical, a coaxial connection does tend to sound better.
